Hi guys, Sophie here. Just thought I'd give a bit of an explanation about our new Clarkson store (particularly for @mammamiaperth loyal customers). Mauricio has run @mammamiaperth for over 13+ years, petty much solely by himself. Two years ago, we dreamed up a new business based on my background as a sourdough aficionado and wholefood lover; Slowdough Pizzas was opened in Willagee, and I have been running that shop ever since. As many of you know, @mammamiaperth was a woodfired pizza shop. This meant that finding staff was extra hard due to the skill and experience needed to work a woodfired oven hence why Mauricio had to work there every single night, and for us to take a holiday we had to close the shop. So we decided that for our family to have a better work life balance, and for Mauricio to be able to take time off without the shop closing, we needed to change Mamma Mia into something that was equally delicious (or more so, plus healthier 😉) as well as easier to run with the help of staff. Slowdough Pizzas Willagee has an amazingly loyal group of customers, so we know what we've done there is resonating with people, and as a business model, it has been much simpler to run (we've even had time off while staff keep the shop running, shock horror in the hospo game 😳). Hopefully, all of @mammamiaperth die-hard fans will be equally impressed with their new pizza shop 😊 We love all our customers, you guys at are amazing and we look forward to seeing to you soon at one of our shops!

I'm not usually one to post selfies but this is a pic of my incredibly devastated face and our empty prepacked icecream freezer. There has been an off-switch confusion incident, and the freezer was accidentally turned off overnight, meaning that we have lost upwards of 60 tubs of icecream. To say I'm absolutely gutted is an understatement. To top it all off, I am away with my family for the next week and won't get back to icecream making until 17th Jan, by that weekend we should have a few flavours back in stock. I know so many of you come and grab your weekend treat, I am so so sorry 😞 we have a few spare tubs from our back freezer, and then the 6 flavours in the scooping ice-cream display, but that'll be it for the next week. Thanks again for all the pizza and icecream love you guys send, whether that's coming in for your weekly fix, sending me a message on socials, or leaving a beautiful review on google. It all means so much, especially when sh*t happens and a tiny part inside feels like saying stuff this hospitality self employment biz ❤️ -Sophie

This gives the yeast and bacteria colonies (which make up a sourdough culture) time to start breaking down the flours which is what gives our dough it's amazing flavour and texture. There has been a constant increase in the cost of ingredients, wages, online payment merchant fees, and outgoings, which we've been wearing the cost of. We've ended up increasing the price on 3 of our pizzas and a few drinks, adding a small online transaction fee, and stopping deliveries (which meant a lot of extra staff costs). We literally make everything from scratch in our shop. This isn't the cheapest way to do things, but the quality of our food is amazing in terms of both flavour and health benefits, and that's really what we care about the most. Hopefully, you do too, and these increases won't offend 😊 - Sophie & Mauricio.
